The balanced connections use a shielded twisted pair cable, the two twisted conductors carry the original signal and a copy of the signal 180 degrees out of phase. At the receiving end the two signals are combined and any interference picked up equally by both conductors is cancelled out.

Balanced connections are found more on professional audio equipment and are preferable to unbalanced. For an unbalanced to balanced connection, wire the the hot conductor on the unbalanced side to XLR pin 2, and the ground conductor from the unbalanced side to XLR pins 1 and 3. Be aware that this wont be a proper balanced connection, for that to work you need balanced connections at both the send and receive end.

Also worth noting that I think you got balanced and unbalanced the wrong way round, XLR carries balanced signals. That's it, in a nutshell!
